Hello, sunshine!
Spring has finally come to Scotland and I am just so happy everyday. I absolutely love having four seasons, but I do believe that sunshine makes people (extra) happy. :-)
I wouldn't call myself a foodie, but I do enjoy nice, homemade meal. As spring has finally come, there are a lot of seasonal ingredients available and my palate changes accordingly. The pictures below are a snapshot of meals that I've been cooking in the past couple of weeks

If you haven't been able to tell, I do love lots of colour on my plate. Different colours of food are seemingly not only pleasing for your eyes but also for your body as a whole because each colour contains a different nutritional benefit. So I try my best to include as many colours as possible, but it ain't always easy when it comes to 'purple'. I find that the easiest way to incorporate purple into my diet is actually through a drink: blueberry smoothie in the morning (yum!)
Anyway,
Today was the warmest day of the year in Edinburgh so my boyfriend and I had a little walk at the park. On the way back home, I dropped by Waitrose and got a cheeky little cuppa coffee, hahah!
What's your favourite dish for spring time?
